To mix it up a bit I will serve a Chipotle Grilled Corn.
Ingredients:
- Corn - Fresh and husks removed - 6
- Butter - Soft - 3 tbsp
- Lime Juice - 2 tbsp
- Chipotle Peppers in Adobo Sauce - 2 peppers and 1 tsp of sauce
- Salt - 1 tsp
Chop the peppers to a fine chop. Mix the butter, peppers, sauce, lime juice, and salt.
If you have the grill space and the time, grill the corn over a medium heat turning frequently till done.
OR
I typically do not have the time or the grill space. I use this method.
- While you are grilling your main dish, place the corn in boiling water
- When the grill is free, remove the corn and place it on a hot grill turning to add grill marks to all sides
Once the corn is done, brush Chipotle Butter mixture onto each ear of corn.
